If my family was going to eat out when I was a kid, more often than not, it was going to be at the local Mexican restaurant. There is one like it in every small town - the ones where they bring you fried ice cream and make you wear a sombrero on your birthday, and you often leave knowing your stomach will be doing somersaults all night but loved every bite regardless. As far back as I can remember, our local Mexican restaurant had this amazing pico de gallo that they made fresh every day (can't say the same for the table salsa - but that pico was amazing!). Ever since then I have been in search of the perfect pico de gallo recipe that stands up to my nostalgic memory of that small town restaurant. One day, I was making a batch and decided to try something I hadn't seen anyone do before - instead of lime juice, I added lime zest. Not only did this reduce the amount of excess liquid significantly, it made the pico so much zestier! It was amazing how well the lime zest enhanced the other flavors and brightened up the mix! You can whip together this recipe in no time at all, and the result is a delicious, fresh, and healthy snack that everyone will enjoy!

Ingredients:

  • 4 medium vine-ripened tomatoes, chopped and seeds removed
  • 1/4 cup cilantro, chopped
  • 1/2 cup red onion, finely chopped
  • 1 jalapeno, finely chopped and seeds removed
  • 2 cloves of garlic, minced
  • 1 tsp salt
  • Zest of 1 lime

Instructions:

  1. Combine all ingredients in a medium bowl and mix until fully incorporated. Tip: To save yourself some time, consider using a garlic press

  2. Taste and adjust seasonings as needed.

  3. Enjoy!
