When I was growing up, my family loved a quick and easy Sunday afternoon barbecue after church. We often headed over to the local grocery store’s deli section and loaded up on potato salad, coleslaw, and macaroni salad along with something to throw on the grill. I remember those days fondly, and after transitioning to a plant-based diet, we wanted to make plant-based versions of all of our favorite summer sides! And of all the incredible summer side options out there, macaroni salad has definitely always been one of our favorites, largely because – well – who doesn't love pasta? One thing we discovered during the process of developing this Vegan Macaroni Salad recipe is that the real secret to making an amazing macaroni salad is striking the perfect balance of sweetness, tanginess, and the pop of flavor from the bell pepper. And when you get the balance right -  oh man! - its happiness in a bite! Don’t worry though - we put in all the hard work to make sure this recipe captures that awesome balance of flavors so that you don’t have to! With just a handful of simple ingredients, you can pull together this quick and easy recipe in no time, and leave your friends and family in awe of your mad cooking skills! Pair with our amazing, smoky Black Bean Burgers, and you are all set for a quick and easy barbecue this weekend!



  • 1 cup vegan mayo (we use Trader Joe's vegan mayo!)
  • 1 tbsp apple cider vinegar
  • 1 tbsp cane sugar
  • 1 tbsp yellow mustard
  • 1 tsp salt
  • Fresh-ground black pepper to taste
  • 1/2 small red onion, finely chopped
  • 2 stalks of celery, finely chopped
  • 1 large green bell pepper, seeds removed and finely chopped
  • 1/4 cup chopped parsley
  • 1 package of elbow macaroni pasta


  1. Combine all ingredients except the pasta in a large bowl. Taste and adjust seasonings as needed. Place in refrigerator for at least 30 minutes.

  2. Cook the pasta according to instructions on the package. When cooked, drain pasta and allow to cool slightly.

  3. Add pasta to the bowl with all other ingredients and mix until the pasta is well-coated. Cover and refrigerate overnight.

  4. Enjoy!
