When developing new, delicious cocktail recipes, we love taking a tried-and-true classic and kicking it up a notch - and that's exactly how this recipe was born! A This and That Kitchen twist on the classic Tom Collins, our Lemongrass Thyme Collins combines juniper-forward London dry gin with lemon juice and our homemade Lemongrass Thyme Simple Syrup for a bright, refreshing cocktail that is perfect for a hot summer day! Just top with Perrier (or your favorite sparkling mineral water, club soda, or seltzer!), garnish with fresh thyme, and enjoy!


  • 2 oz London dry gin
  • 3/4 oz lemon juice
  • 1/2 oz lemongrass thyme simple syrup (find the recipe here!)
  • 1 - 2 oz Perrier (or your favorite sparkling mineral water, club soda, or seltzer!)
  • 1 small bunch fresh thyme (for garnish)


  1. Combine gin, lemon juice, and lemongrass thyme simple syrup in a shaker and add ice. Tip: To make your life easier, try using a citrus press like this one!

  2. Shake and strain into a highball or old-fashioned glass filled with ice.

  3. Add Perrier and garnish with fresh thyme.
  4. Enjoy!
