So we found a compromise - a cookie that satisfies those cravings while being absolutely packed with nutrition! While it doesn’t taste like it, the base of these cookies is a generous helping of chickpeas, which pack a ton of protein, iron, calcium, fiber, and other nutrients and vitamins! What you do taste is one of the most perfect flavor combinations in the world - peanut butter and chocolate! And the best part is just how easy it is to whip up a batch since everything goes into a food processor and then straight into the oven! Whether you are looking for a delicious late-night snack or a nutrient-rich grab-and-go breakfast to fuel your workday, we guarantee these Vegan/GF Protein-Packed Peanut Butter + Chocolate Cookies will have you coming back for more!

Ingredients:

  • 1 (15 oz) can chickpeas, drained

  • 1 cup rolled oats

  • 1/3 cup peanut butter

  • 3 tbsp cocoa powder

  • 1/4 cup maple syrup

  • 1 tbsp coconut oil

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1 tsp baking powder

Instructions:

  1. Preheat oven to 375° F (190° C). Line a baking sheet with parchment paper.

  2. Place rolled oats in a food processor and process on high until the oats are a powder. Add chickpeas and process until the chickpeas are completely broken down, scraping down the sides as needed.

  3. Add peanut butter, cocoa powder, maple syrup, coconut oil, vanilla extract, salt, and baking powder to the food processor and process until ingredients are fully incorporated into a smooth dough.

  4. Roll dough into balls (about a tablespoon each) and place on the baking sheet. Use a fork to press down the balls and create a crisscross pattern on the top of the cookies.

  5. Bake for 10 minutes and then allow to cool on baking racks.

  6. Enjoy!
