Is there a better feeling than the thrill of someone handing you a platter of nachos loaded down with amazing toppings?! From that point, you go into attack mode, taking an inventory of the incredible toppings before you and formulating your strategy for tackling the mountain of deliciousness! There really is an art to taking down a giant pile of nachos (especially if you are sharing with someone else and don't want to appear like a total animal!). This nacho recipe has been our go-to recipe when we are looking for an excuse to whip together a quick batch of our amazing 20-Minute Vegan Queso! We also use two additional original recipes when pulling this nacho combination together, our Vegan Carnitas and Zesty Pico de Gallo recipes! And of course, we made sure that all of the topping recipes are quick and easy to make; because let's be real - when you have a hankering for nachos, you don't want it to take all day to pull together. Make this recipe for your next gathering or (even better!) just for you! You (and anyone you decide to share with) will end up fat and sassy (and oh so happy!) once you dig into this cheesy, "meaty" nacho mountain!

  1. Prepare the queso, pico de gallo, and carnitas according to their recipes. Tip: These are all very quick and easy recipes! 

  2. Disperse the bag of chips onto individual plates or onto a large group platter. 

  3. Assemble nacho topping in the following order: queso, black beans, pico de gallo, carnitas, jalapeños, and cilantro. 

  4. Squeeze on some fresh lime and enjoy!
