We like to think that our recipe ideas are always born from considerable effort and creativity, but let’s get real for a minute - this recipe is the direct result of us coming across a bag of pasta that looks like little pumpkins (called zucchette) at Whole Foods, getting ridiculously excited about how cute they were, and immediately trying to think of a sauce that we could make them with so we had an excuse to buy them! Ultimately, we wanted the dish to be indulgent and to highlight two of our absolute favorite flavors - garlic and sage! And when we each took our first bite, this recipe blew away every expectation that we had! We thought it would be an extremely simple dish that we probably wouldn’t even post about, but after that first bite, we knew that we just discovered our new favorite 15-minute meal (not even kidding - it only takes 15 minutes!). With just a few simple ingredients, this recipe packs a ton of flavor, and it's so ridiculously easy to pull together that literally anyone can make it! So give it a try this week with your favorite pasta - we know you’ll love it as much as we do!

Pairings:

Ingredients:

  • 16 oz of your favorite pasta

  • 1/2 cup vegan butter

  • 1 shallot, finely chopped

  • 3 cloves garlic, minced

  • 2 tbsp fresh sage, chopped

  • Fresh-cracked black pepper to taste

  • Vegan shredded parmesan

Instructions:

  1. Cook pasta per the package instructions.

  2. While the pasta is cooking, sauté the shallot, garlic, and fresh sage in the butter until the shallots are translucent and the butter begins to brown. Tip: To save yourself some time, consider using a garlic press

  3. Drain the pasta, toss it in the brown butter sage sauce, and top with vegan parmesan.

  4. Enjoy!
