The comfort food of my childhood has emerged as a common theme in our recipes - and it is only right that I pay homage to the loved ones that inspired the dishes we create! When it comes to biscuits ‘n’ gravy, I know exactly who inspired me - my dad! Whether it was a special holiday treat or just a Saturday morning breakfast, my dad was renowned for his cast iron skillet sausage gravy! We always knew he was planning on filling the house with the delicious smell of biscuits ‘n’ gravy when he came home from the grocery store with a gallon of thick whole milk (I didn’t say it was a healthy version - it was the ‘90s!). In honor of those memories (which I still hold close to my heart!), we have spent many weekends making various vegan versions until we finally landed on this one - which absolutely lives up to my memories of indulgent gravy made with love by my dad! Whether you make it on Christmas morning or next weekend for brunch, you will love how easy it is to whip together! And when your loved ones begin to emerge from their weekend slumber to find delicious vegan biscuits baking and savory sage and sausage gravy bubbling on the stovetop, we guarantee they won’t be able to get enough!

Instructions:

  1. Make a batch of The Perfect Buttery Vegan Biscuits. Once they are in the oven, get started on the gravy.

  2. Add vegan sausage to a skillet with olive oil and sauté while breaking apart the sausage into small bite-size pieces.

  3. Once the sausage has a nice sear, set aside and add the butter to the skillet and allow to melt. Add the flour and incorporate with butter into a paste. Sauté for 1-2 minutes to allow the flour flavor to cook off. Begin to incorporate the milk 1/2 cup at a time, whisking thoroughly to break down any clumps.

  4. Add the salt, white pepper, sage, garlic powder, and onion powder and continue to whisk until the gravy is smooth and thick. Add the sausage back into the skillet and toss in the gravy.

  5. Pour over fresh-from-the-oven biscuits!

  6. Enjoy!
