The Ultimate Vegan Crunchwrap

Whether we want to admit it or not, we both grew up with a real love for Taco Bell. My family always stopped by late after Wednesday church services for a quick bite - which with 8 people was always a mammoth order (poor drive-thru operator)! As bad as it may be for you, America loves Taco Bell, and after transitioning to a plant-based diet, we found ourselves looking for an alternative! Not finding any real alternatives out there, we turned to our kitchen to see what we could cook up. We've always loved the crunchwrap supreme, so we set out to tackle it first! The result - a flour tortilla loaded down with vegan queso, vegan meat crumbles, a crunchy tostada, lettuce, pico de gallo, and vegan sour cream - was SO delicious and easy to make that we found ourselves wanting to make this recipe all the time. We know that - regardless of whether you also held Taco Bell in a special place in your heart at one time or another - you too will love this recipe! Trust us, you won't be able to get enough!

  • 1 batch 20-Minute Vegan Queso
  • 1 batch Zesty Pico de Gallo
  • 12 oz vegan meat crumbles
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 head of lettuce, chopped
  • 12 oz vegan sour cream
  • 6 tostadas
  • 6 extra large flour tortillas

  1. Prepare your Zesty Pico de Gallo and 20-Minute Vegan Queso. Set aside.

  2. In a bit of olive oil, sauté meat crumbles over medium heat with garlic powder, cumin, and chili powder until spices are incorporated. Set aside.

  3. Time to assemble! Lay a tortilla on a flat surface and spread a generous dollop of queso in a circle in the center of the tortilla. Layer on the remaining ingredients in the following order: meat crumbles, tostada, sour cream, lettuce, and pico de gallo. Tip: We know it's tempting, but be sure not to pile the fillings too high, or you won't be able to get it to close!

  4. To fold the crunchwrap, wrap a flap of the tortilla up and over the filling. Continue to do this as you work your way around the fillings. Tip: This typically takes about 5 folds. If you don't get it on the first couple of tries, don't worry - it will still taste amazing, and you will get the hang of it eventually!!

  5. Once all the folds are in place, place the crunchwrap (folded side down) in a skillet on medium heat until it has an even golden-brown color. Carefully flip the crunchwrap and cook the other side until it is also golden-brown!

  6. Enjoy!
