Tales of the Black Freighter (Rum Old-Fashioned)

These days, rum is easily becoming one of our absolute favorite spirits, largely because it’s just so versatile! During the warmer months, we absolutely fell in love with combining lighter rums with fresh summer fruits and herbs to create refreshing, easy-drinking cocktails perfect for beating the summer heat. But now that fall is upon us, all we can think about is mixing up some incredible cocktails highlighting some of our favorite rich, decadent aged rums - and what better way to do that than with a rum old-fashioned? Our take on a rum old-fashioned combines an incredible aged rum (we used El Dorado 12 Year Old!) with a generously spiced cinnamon + allspice syrup, Angostura and orange bitters, and a well-charred cinnamon stick to create a rich slow-sipper that will keep you warm all season long! And because the start of October means that Halloween is coming up fast, we’ve gone into full swashbuckler mode with this one - with all the incredible possibilities, it’s hard not to be at least a bit theatrical this time of year! So mix up one (or two!) of these insanely decadent rum old-fashioneds to help keep you warm during these increasingly chilly fall nights - we know you’ll love it as much as we do!


For Cocktail:

  • 2 oz aged rum (we used El Dorado 12 Year Old!)

  • 1/2 oz homemade cinnamon + allspice simple syrup (see recipe below)

  • 1 dash Angostura bitters

  • 1 dash orange bitters (we used Regan’s Orange Bitters No. 6!)

  • Charred cinnamon stick (for garnish)

For Simple Syrup:

  • 1/2 cup water

  • 1/2 cup turbinado sugar

  • 2 cinnamon sticks

  • 1 tsp whole allspice


  1. To make simple syrup, combine sugar, water, cinnamon sticks, and allspice in a small saucepan over high heat, stirring periodically to dissolve the sugar. When the mixture begins to boil, reduce heat and simmer for 15 minutes. Let the syrup cool completely, transfer to an airtight container, and refrigerate - if stored properly, the syrup should keep for up to a month!

  2. Combine aged rum, cinnamon + allspice simple syrup, Angostura bitters, and orange bitters in a mixing glass and fill with ice.

  3. Stir and strain into an old-fashioned glass filled with ice and garnish with a charred cinnamon stick.
