Roasted Miso-Glazed Carrots

I still hold to this day that I am not a picky eater, BUT there were a handful of foods that I absolutely hated as a child! Carrots were certainly at the top of that list, likely due in part to the daily allotment of carrot juice we all drank because there were adults who insisted that nutrition is important (I wasn't convinced!). It wasn't until I discovered that we could make delicious carrot dishes just by roasting them in amazing sweet and savory glazes that I began to rethink my no-carrots policy. There are still days when I cringe at Nathan taking a big bite out of a carrot stick, but anytime I get the chance to throw them in the oven with an incredible glaze, I am down to bunny up and munch away on some delicious roasted carrots! This glaze is one of our absolute favorites, as the miso pairs so beautifully with the carrots’ natural sweetness, making an unconventional but amazing combination! While miso might not be the first flavor you think of to go with a holiday feast, trust us, it brings something new to the table and switches up the traditional flavors in an awesome way! If I can get behind these carrots, we know that just about anyone (at least anyone who lacks an anti-carrot agenda!) will absolutely love these!


  • 4 tbsp miso paste

  • 4 tbsp maple syrup

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 lb carrots


  1. Preheat oven to 400° F (205° C). Line a large baking sheet with parchment paper.

  2. Whisk the miso paste, maple syrup, olive oil, and garlic powder in a medium bowl until the miso paste is fully broken down.

  3. Spread carrots over the baking sheet and brush them thoroughly with the glaze, rotating to cover all sides. Place in the oven and roast for approximately 45 minutes or until the carrots are tender throughout!

  4. Enjoy!
