Summer is an amazing time of year, especially in Chicago where the warm, sunny weather of the summer months is a welcome respite from the bitterly cold winters! And yet for us, summer also comes with a unique dilemma - we want cocktails that are quick to pull together so that we can spend as much time as possible outside enjoying this incredible summer sun but that are still complex and flavorful! That's exactly where cocktails like this Mezcal and Tonic really shine! By combining smoky mezcal with sweet, tart grapefruit juice and topping it all off with a few ounces of refreshingly bitter tonic water, you end up with a drink that is impossibly balanced and endlessly refreshing! And because it requires only three ingredients with no shaking required, this is a cocktail that can easily be pulled together in a minute or two or scaled up to serve to a group at your next summer barbecue! So mix up one (or two!) of these incredibly quick and easy Mezcal and Tonic cocktails and get back outside to enjoy the sunny summer days ahead!



  • 2 oz mezcal
  • 1/2 oz fresh grapefruit juice
  • 3 oz tonic water (We use Q Tonic!)
  • 1 grapefruit peel (for garnish)
  • 1 sprig rosemary (for garnish)


  1. Fill an old-fashioned or highball glass with ice.

  2. Add mezcal, grapefruit juice, and tonic water.

  3. Stir briefly to combine, and garnish with a grapefruit peel and a sprig of rosemary.

  4. Enjoy!
