Maple Mustard-Glazed Brussels Sprouts

I don't think there was a veggie that I was more apprehensive to try as a teenager than Brussels sprouts. For years, I had heard countless tales describing Brussels sprouts as little ball of bitterness that smelled terrible - to say that my mom was not a fan would be a vast understatement. And as a result, Brussels sprouts never entered our household. Then came the day when - in moment of feigned bravery - I scooped a ladle-full of oven-roasted, balsamic-glazed Brussels Sprouts onto my plate at our favorite local market. That truly was an eye-opening event for me, and since then, I have been absolutely obsessed with them! Most of the time, we enjoy them plain with just a bit of salt, pepper, and garlic powder, but some days, we crave a little something extra! While we’ve tried many different glazes over the years, we always come back to our favorite - maple mustard! The combination of maple syrup and spicy brown mustard creates a perfect balance of sweet and savory that we can’t get enough of (not going to lie - it can be a struggle to stop ourselves from finishing off the whole pan!). Perfect for an everyday meal or a holiday feast, these Maple Mustard-Glazed Brussels Sprouts are both incredibly delicious and seriously easy to make - just whip together your glaze, toss it over some halved sprouts, and pop those ole sprouts in the oven to roast!


  • 1 pound Brussels sprouts, halved

  • 4 tbsp spicy brown mustard

  • 2 tbsp maple syrup

  • 2 tbsp olive oil

  • Salt and fresh-cracked black pepper to taste


  1. Preheat oven to 400° F (205° C). Line a large baking sheet with parchment paper.

  2. Combine spicy brown mustard, maple syrup, olive oil, salt, and pepper in a medium bowl and whisk until fully incorporated. Taste and adjust seasonings as needed.

  3. Spread Brussels sprouts over the baking sheet and brush thoroughly with the glaze, rotating to cover all sides. Place in oven and roast for approximately 45 minutes or until the sprouts are tender throughout.
