At This and That Kitchen, we love working to take our cocktails to the next level by creating our own homemade ingredients - and to us, making homemade simple syrups infused with some of our favorite herbs and spices is one of the best (and easiest!) ways to introduce new and interesting flavors into the drinks we make! In this recipe, we took two of our absolute favorite ingredients - lemongrass and thyme! - and combined them to create an herbal, fragrant simple syrup with a rich, complex depth of flavor. And this syrup became a key ingredient in one of our favorite original cocktails - the Lemongrass Thyme Collins! It's also definitely worth noting that syrups like this one are NOT just for cocktails - they can also be used as sweeteners for coffee or tea or even used as a flavorful glaze on your favorite desserts! So whip up a quick batch and explore all of the amazing possibilities that come with making your own awesome infused syrups at home!

Use It to Make:


  • 1/2 cup sugar (we use cane sugar!)
  • 1/2 cup water
  • 1 stalk lemongrass
  • 30 sprigs fresh thyme (a standard 1 oz. pack of thyme is plenty!)


  1. Cut the lemongrass into 1 inch-long pieces. You will need 5 of these pieces.

  2. Combine sugar, water, lemongrass, and thyme in a small saucepan over high heat, stirring periodically until the sugar is dissolved.

  3. When the mixture begins to boil, reduce heat and simmer for 15 minutes, stirring periodically.

  4. Let the syrup cool completely, strain out lemongrass and thyme, transfer to an airtight container, and refrigerate - if stored properly, the syrup should keep for up to a month.

  5. Use this syrup in your favorite cocktail, drink, or dessert!
