Easy, Delicious Vegan Pesto

Let's be honest - Pesto is one of our absolute favorite indulgences! Growing up deep in the Midwest, we went our entire early lives without so much as a single taste of pesto. This pesto-free lifestyle ended abruptly during college when we came across a basic pesto recipe, whipped up a quick batch, and threw it on a pizza - it changed our lives forever! Since then, we've worked long and hard to perfect our pesto recipe - and it's so rich and flavorful, we eat this stuff on literally everything! Not only is it absolutely delicious, it is also incredibly easy to make! All you have to do is throw your ingredients into a food processor and give it a whirl - It just doesn't get easier than that! Perfect for those busy nights when you need to pull together a meal quickly, just boil some pasta, drain, and combine with this pesto for a delicious, satisfying meal that the entire family will love!

Ingredients:

  • 1/2 cup walnuts
  • 1/2 cup raw cashews
  • 2 cloves garlic, minced
  • 1 cup vegan parmesan
  • 1 cup fresh basil, stems removed
  • 5 tbsp olive oil
  • 1 tsp salt

Instructions:

  1. Place walnuts and cashews in food processor and process until they have the consistency of breadcrumbs. Tip: You can save money by buying cashew pieces instead of whole cashews (as they tend to be cheaper per ounce). This is true of many types of nuts! Save those pennies!

  2. Add garlic and parmesan and process until both are fully incorporated. Tip: You can save yourself a ton of time with a garlic press like this one.

  3. Add remaining ingredients and process until basil is fully broken down. If the mixture is too dry and crumbly, add more olive oil in 1 tbsp increments. Taste and adjust salt as needed. 

  4. Enjoy!
