Cold Brew and Tonic

This time each year, we are always so conflicted. We are so ready to dive head first into creating incredible drinks using all of our favorite fall flavors (fall is officially here!), but we also have to deal with the fact that - as we saw this last week in Chicago - the sweltering summer heat isn’t going without a fight. In moments like these, we strive for compromise - the result of which is a drink that showcases one of our all-time favorite fall flavors - rich, bold cold brew coffee - by combining it with refreshingly bitter tonic water and a splash of simple syrup to create a drink perfectly crafted to beat the lingering summer heat! And on top of being delicious and endlessly refreshing, the fact that this drink requires only an ice-filled glass and three simple ingredients to make means that you can go from being absolutely parched to sipping on this ice-cold thirst-quencher in literally seconds flat!

It’s also definitely worth noting that while we love making drinks with our own homemade cold brew recipe, we actually made this one using a product we tried out recently called La Pod Cold Brew One Coffee Pods. Essentially, these coffee pods are designed to make brewing single servings of cold brew coffee a quick and easy process - all you need to do is place one pod in a glass of water, let it steep overnight, remove the pod in the morning, and add ice! Like any product, there are pros (great taste, ease of use, and the ability to have homemade cold brew in a single-serve format) and cons (lack of customizability of strength/flavor profile) to using these cold brew pods. That said, if you are interested in homemade single-serve cold brew or are just looking for an easy, convenient, mess-free way to make cold brew coffee without sacrificing on flavor, we definitely recommend that you give these coffee pods a try! For Drink:

For Simple Syrup:

  • 1 cup sugar (we use cane sugar!)

  • 1 cup water


  1. To make simple syrup, combine sugar and water in a small saucepan over high heat, stirring periodically to dissolve the sugar. When the mixture begins to boil, reduce heat and simmer for 5 minutes, or until sugar is fully dissolved. Let the syrup cool completely, transfer to an airtight container, and refrigerate - if stored properly, the syrup should keep for up to a month!

  2. Combine coffee, tonic water, and simple syrup in an old-fashioned, highball, or stemless wine glass filled with ice.

  3. Stir briefly to combine and garnish with a lemon wheel and star anise.

  4. Enjoy!
