Cherry + Mint Cubata

What is one to do when Costco runs a major sale on cherries? Buy four pounds and make cherry-based cocktails, obviously! Playing off of one of our favorite classic cocktail recipes - the Cubata - this recipe incorporates the flavors of herbal mint and amazingly rich and juicy summer cherries! If you haven't heard of a Cubata before, you're not alone - we honestly just learned recently (despite having made them countless times!) that this is the name given to a Cuba Libre made with aged rum instead of the classic white rum! And for us, a proper Cubata wouldn't be complete without a healthy dose of Mexican Coke! Perfect for beating the summer heat, this recipe balances the rich sweetness of the cherries, Coke, and rum with additions of fresh mint, lime juice, and bitters! We know you will love this cocktail as much as we do! So run over to Costco before the sale is over or hit up your local farmers' market for a handful of beautiful, fresh cherries to soak in booze!  


  • 2 oz aged rum
  • 1/2 oz fresh lime juice
  • 2 dashes Angostura bitters
  • 4 cherries, pitted
  • 4 leaves of fresh mint
  • 4 oz Mexican Coca Cola
  • Cherries, pitted (for garnish)
  • Fresh mint (for garnish)


  1. Combine lime juice, Angostura bitters, and cherries in a cocktail shaker and muddle. Tip: To make your life easier, try using a citrus press like this one!

  2. Add rum, fresh mint, and ice to the shaker.

  3. Shake and double strain into a highball, old-fashioned, or wine glass filled with ice.

  4. Top off with Mexican Coca Cola and garnish with cherries and mint.

  5. Enjoy!
