20-Minute Vegan Queso

Do you have a favorite recipe that you find yourself making way too often because you just can't get enough?! For us, that is (hands down!) our vegan queso recipe! When we first started trying queso recipes from various vegan food bloggers, we loved the texture of one and the flavor of another, but to us, none of them were just right. So we set out to take everything we had learned from other recipes to create the ultimate vegan queso, and we think we nailed it! This queso has the perfect consistency, a deep cheesy, smoky flavor, and it keeps well in the refrigerator if stored properly (making it perfect for meal prep!). The secret to this depth of flavor is using a chipotle pepper in adobo sauce and cumin in addition to the traditional nutritional yeast! And perhaps the best part is just how easy it is to make! Since you end up putting everything in a blender, you don't have to worry about whisking for the rest of your life to get all the lumps out! Perfect for nachos, tacos, burritos, and everything in between, you have to give this recipe a try! Your friends and family will thank you!

Pairings:

Ingredients:

  • 3 tbsp vegan butter
  • 4 cloves garlic, minced
  • 1 chipotle pepper in adobo sauce (We use La Costena!)
  • 1/2 tsp adobo sauce
  • 3 tbsp unbleached all-purpose flour
  • 1 3/4 - 2 cups unsweetened plain almond milk
  • 5 tbsp nutritional yeast
  • 1/2 tsp sea salt
  • 1/2 tsp ground cumin

Instructions:

  1. Add butter to skillet and heat over medium heat until melted. Add minced garlic and chipotle pepper and sauté until fragrant, about 1-2 minutes. Tip: You can save yourself a ton of time with a garlic press like this one
  2. Add flour to skillet 1 tbsp at a time. Whisk until all butter is absorbed and then allow the mixture to sizzle for about a minute, which cooks out the floury taste.
  3. Slowly pour in the almond milk (1/2 cup at a time), whisking until smooth. 
  4. Once all of the milk is incorporated, allow the mixture to come to a simmer, whisking periodically. Once simmering, carefully transfer the mixture to your blender and add the remaining ingredients.
  5. Blend on high until smooth and creamy, scraping down the sides as necessary. Taste and adjust seasoning as needed. 
  6. If stored properly in an airtight container, it keeps well in the refrigerator for 3-4 days!
  7. Enjoy!
